The social change, which defines the differentiation occuring at a certain period of time, is a universal phenomenon that is common in all societies. The social change occurs in all institutions of society, such as religion, family, education, economy, politics and it also influences the food culture. These changes are accompanied by the shaping of the cuisine. This can be observed sometimes through the meaning of the food, sometimes through different ingredients of the food and sometimes even through the changes in table manners. The study is based on the field research taken place in Mardin province. For this purpose, within the scope of research, indepth interview method, one of the qualitative research techniques, was used. In the research, it was found that the food culture changes depending on the social changes. Changes resulting from the transformation of modernity into family structure, differences in gender perceptions and conversion of food due to globalization and technological developments are the headlines in the study.
